Extolling Extracts

In my cooking of late, I have been using extracts to add a little extra oomph to drinks, desserts, and confections. One of my favorites is coconut extract (especially in summer). I recently added a generous swig to a rich, chocolate cake and the flavor was amazing!

I often add mint flavoring to coffee drinks or fudge, and almond extract is a baking staple.

The most unusual extract I’ve found is banana and I’ve mixed it into frosting and ice cream. Another one I can’t wait to try is black walnut.
