Culinary Treats: The Chile Relleno
I had my first Chile Relleno today and it was delicious. I always assumed that because Chile Rellenos are made with roasted, charred peppers the dish would be too spicy for me. I was wrong. Chile Rellenos are rich and flavorful, while being a bit lighter on the tummy than a tortilla or carb-laden dish.
The Chile Rellenos that I sampled were stuffed with a spicy chicken mixture that emphasized cumin and cilantro — two of my favorite Southwestern/Mexican flavors. Between the spiced chicken and the cheese-crusted pepper, I was pleasantly full.
I’m putting Chile Rellenos on my Culinary Bucket List this weekend, and I look forward to making them as soon as possible! Does anyone have any tips or filling suggestions for me to try?
