Barley, Who Knew?

I cannot take credit for this tip, I actually heard it from The Dr. Oz Show, but barley sure makes a tasty swap for rice in everyday cooking. Barley… it’s not just for soups anymore!

I would never would have thought to use barley instead of rice myself, but it is amazingly filling and flavorful. I love to pair it with crisp, stir-fried veggies from the wok, and a rich, peanut sauce.  The fiber contained in a serving of barley is a nutritional bonus.
