I am convinced there is nothing that a good margarita cannot fix. I have also been on a peach kick lately: adding peach soda to my teas, making peach pies, and now…peach margaritas!
Makes 4 drinks.
Blended Peaches (recipe below)
1-2 shots tequila, depending on your taste (I used 2 shots for four glasses)
2 dashes triple sec
lime juice and cane sugar or sea salt to rim the glass*
2 cups fresh peaches (you can also use frozen peaches, just thaw them for 30 minutes in a bowl with the lime juice and cinnamon)
2 tablespoons fresh lime juice**
1/4 teaspoon ground cinnamon
2 tablespoons simple syrup (you can add a little more if the peaches are a bit sour)
Make Blended Peaches by mixing the fruit and flavorings in a blender until pureed and smooth.
Add triple sec and tequila, and continue to puree until combined.
Prepare the rim of the glass – it’s easy to make a salty or sugary rim. You will need two plates large enough to fit the rim of your margarita glass.
Fill one plate with cane sugar or sea salt crystals. Squeeze some fresh lime juice onto the other plate.
Then, dip the rim of the glass first in the lime juice, and finally in the salt or sugar.
*If you want to be fancy, you can add a little lime zest to the salt or some fresh ground black peppercorns, like I did.
**If you’re not a fan of lime juice, substitute lemon juice or apple juice.
